The Blackfly menu is an exercise in creativity. To loosely quote Anthony Bourdain, “our menu may not be the road to world peace, but it’s a start.” Our original menu concept was to take the best recipes from all of the various fishing lodges in the Caribbean, including our own Blackfly Lodge in Abaco Bahamas, and make that the basis for what we would offer. Our fish, shrimp, steaks and vegetables are as fresh as we can get. Our vegetables are harvested locally from the farms to the west of St Augustine where Henry Flagler promoted farming to feed his guests at the famous Ponce De Leon Hotel in the 40’s. Authentic is the word for our menu, and it certainly also describes our kitchen filled with hard working chefs who love the steam, simmering smells and a hot line of stoves, grills and searing flat tops.
